Ground Beef Enchiladas

Need a ground beef recipe that everyone will love, plus easy to make? The Bundick Family has you covered! These are our favorite Ground Beef Enchiladas. We have served this for guests and the enchiladas are always a big hit. The flavor is amazing, especially when you use our homegrown grass-fed, grass-finished ground beef! This recipe will take about an hour to make all together, but your family and guests will go crazy for them every time!

Ingredients

  • 2 Pounds Lean Ground Beef

  • 1 Sweet Onion, Diced

  • 2 Tablespoons Chili Powder

  • 2 Tablespoons Cumin Powder

  • 1 1/2 Tablespoon Garlic Powder

  • 1 Tablespoon Onion Powder

  • Sea Salt, to Taste

  • Freshly Ground Pepper, to Taste

  • 3 - 10oz Cans Enchilada Sauce

  • 2 - 7oz Cans Green Chiles, Diced

  • 3 Cups Mexican Style Blend Shredded Cheese

  • 1-2 Tablespoons Olive Oil

  • Corn Tortillas

  • Fresh Cilantro, for garnish

  • Fresh Lime, topping

  • Fresh Avocado, topping

  • Fresh Pico De Gallo, topping

Directions

  1. Place large skillet on stovetop. Spray with olive oil. Add one diced sweet onion to skillet and saute.

  2. Add 2 pounds lean ground beef to the skillet. Add all of the seasonings to the ground beef; chili powder, ground cumin, garlic powder, onion powder, salt, and pepper. (Use more or less seasoning depending on you personal preference).

  3. Add one can of green chilis, not drained.

  4. Once ground beef mixture is cooked completely, turn off heat and set aside.

  5. Next, heat the red enchilada sauce in a saucepan.

  6. Pour a thin amount of enchilada sauce into the 9x12 casserole dish that you will be placing enchiladas in. Make sure the entire bottom of dish has enchilada sauce covering it. This will keep the enchiladas from sticking when baking.

  7. Take each tortilla and dip into the sauce to warm them up.

  8. Now, let’s put the enchiladas together. Just add the mixture of ground beef to the corn tortillas and roll each one up.

  9. Place them snuggly, side by side in the baking dish. Pour the remaining enchilada sauce over them and sprinkle the cheese! You can also add a few more green chilis to the top!

  10. Pre-heat oven to 350 degrees. Cover your 9x12 casserole dish with tin foil and place in oven. Bake for 45 minutes.

  11. Once done, top with your favorites! We use fresh cilantro, avocado, pico de Gallo, and a squeeze of lime juice!

  12. Serve the enchiladas with some black beans and rice and you will have everyone rushing for seconds!
