Beef Taco Lettuce Wraps

As you can tell, we love Mexican food in our family. This recipe is not only delicious, but it is quick and easy, plus guilt free! We honestly have a taco night at least once a week in our house! Jim and I usually do the lettuce wraps, while we make quesadillas for the kids out of the rest of the prepared ground beef. Win/Win for everyone! :)

Ingredients:

  • 1-2 lbs. lean ground beef

  • 1 small white or sweet onion chopped

  • Taco Seasoning: Chili powder, ground cumin, paprika, onion powder, garlic powder, dried oregano, cayenne powder, and salt to taste. I just eyeball it. (When I don’t make taco seasoning from scratch, we use “Siete Mild Taco Seasoning,” it’s our favorite seasoning packet to keep on hand. One packet is usually enough for 1-2 lbs of ground beef.)

  • Romaine Hearts (Our favorite because of the crunch!)

  • 1 tomato chopped

  • 1 cup shredded cheddar cheese

  • 1-2 avocados sliced

  • Toppings: salsa, sour cream, guacamole, lime etc.

Directions:

  • Thaw out 1-2lbs of lean ground beef. (We thaw out 2 lbs. because we love having leftovers for this dish.)

  • In a large cast iron skillet, over medium-high, cook the ground beef with the chopped onion until beef is brown and fully cooked. Drain any grease. (If using our ground beef, you don’t usually have any to drain because of how lean it is.)

  • Add your taco seasonings to the skillet. Stir and cook for another 5 minutes or so.

  • Remove lettuce leaves and rinse with water; pat dry.

  • Cool slightly before scooping into lettuce leaves.

  • Take each leaf and fill with 1/3 cup taco meat.

  • Top each taco lettuce wrap with tomato, avocado, cheese, sour cream, salsa and any other topping you desire.

  • Finish with a little squeeze of a lime over each taco lettuce wrap.

  • And enjoy!
